Our last day of cooking school.  Today we learn the secrets of making healthy, heart-friendly Mexican food.  We head over to "La Cocina" in the morning and have a wonderful class with Kris.

Here's our menu for today...

Aqua de Guayaba (fresh Guava juice)
Shrimp with Green Pipian Sauce (This delicious sauce was made of pumpkin seeds, sesame seeds, roasted tomatillos, serano chiles, onion, lettuce leaves, cilantro & stock - so good!)
Chicken with Roasted Tomato Salsa (Another delicious pico de gallo sauce with onions, garlic, tomatoes, thyme, oregano and cilantro)
Roasted Nopales Salad (Made from cactus paddles, tomatoes, onion, chiles, cilantro and lime juice - yum!)
Mango Mousse - (This was heavenly!)

Here are the nopales (cactus paddles) with thorns removed...

We had another free afternoon.  Kate and Keith went shopping.  Bowie went to the gym and to an AA meeting, Joss, Malia and Christian went to "La Gruta", a hot thermal bathing area, and the Podz stayed at the house and meditated.

In the evening we met Kris at "Azafran" for our last class event.

We had an extraordinary dinner.  Here are some photos of some of the dishes we sampled...

Spinach salad with mango, avocado, roquefort cheese and carmelized pecans...

Fresh beets with watercress and goat cheese...

Roasted Duck with Chocolate Sauce and Carmelized Pineapple...

Thai Shrimp, Veggies and Rice...

Polenta with a Wild Mushroom Sauce...

A happy group...
