Lavender Fields Forever in Kaikoura...

On our way out of Kaikora, we stopped and visited the Lavender Gardens...



They have 40 different varieties of lavender growing here.  A plant can last 15 years.











Here is where the lavender bunches hang to dry.  They are used in the saché pouches, jams and mustards.  After they harvest the other lavender, it is then distilled into oils, or essential perfumes.  It takes a huge amount of lavender to make a little essential oil.  Then it has to cure for approximately 8 months before it is bottled and sold.  The owner of this garden learned how to do all of this through reading books.

It was a glorious tour!
